(Makes about 30 cookies)
- 25g candied orange peel
- 100g cold butter
- 50g powdered sugar
- 1 tsp. orange zest
- 1 egg yolk
- 130g flour
- 75g almond flour
- 60g Grama's Orange Marmalade
- 80g marzipan
- 1/4 tsp. cocoa powder
Equipment: 2 star-shaped cookie cutters, 2" & 1.5" diameter
Preheat the oven to 360°F.
Finely chop the candied orange peel.
For the dough, cut the butter into small pieces. Mix the orange peel, butter, powdered sugar, orange zest, a pinch salt, and egg white with a hand mixer. Add the flour and almond flour. Mix first with the hand mixer, then knead with your hands to form a smooth dough.
Briefly knead the dough, then roll out on a lightly floured surface approx. 1/8 inch thick. Cut out stars with the 2" cookie cutter. Place stars on two baking sheets lined with parchment paper. Repeat with the remaining dough until all dough has been used (approx. 60 stars). Bake one sheet at a time for 8-10 minutes until lightly browned. Let cool.
Set aside 1-2 tsp. orange marmalade. With the remaining marmalade, spread a thin layer of marmalade on half of the stars. Place one bare star on top of one spread with marmalade to make sandwiches, pressing lightly if needed. Repeat with remaining cookies.
Color 1/4 of the marzipan by placing it in a bowl with the cocoa powder and kneading. Very lightly knead together the brown and white marzipan to create marbling. Press flat and roll between two sheets of plastic wrap to 1/16 in. thickness.
Cut out stars from the marzipan with the 1.5" cookie cutter. Use a little of the reserved marmalade on each star to "glue" them on top of the cookies.
- Store the cookies between sheets of parchment paper in an airtight container for up to 3 weeks.
- Instead of cocoa powder, you can dye the marzipan with food coloring in the colors of your choice.
